Apr\u00e8s un d\u00e9tour par le design d\u2019int\u00e9rieur, il choisit la cuisine comme langage. L\u2019assiette devient sa toile, le restaurant Bonno Nino son atelier.<\/p>\n<p>Dans les Pouilles, l\u2019art byzantin est partout : dans les absides peintes, les fresques rupestres, les d\u00f4mes orn\u00e9s de mosa\u00efques. L\u2019oratoire de Casaranello (Ve si\u00e8cle) offre un ciel \u00e9toil\u00e9 comme une promesse d\u2019\u00e9ternit\u00e9. Entre le VIIIe et le XIe si\u00e8cle, la domination byzantine impr\u00e8gne l\u2019architecture, les ic\u00f4nes, et les rites.<\/p>\n<p data-start=\"633\" data-end=\"1132\">\u00c0 Paris, cette esth\u00e9tique se transpose dans les plats de Kevin Negro. La dorade et sa mosa\u00efque de l\u00e9gumes reprend le principe du fragment color\u00e9 assembl\u00e9 en un tout harmonieux. Les viandes y tiennent le r\u00f4le des figures h\u00e9ro\u00efques : Scaloppina al tartufo, noble escalope de veau aux champignons et truffe noire, ou Cotoletta alla milanese, pan\u00e9e avec la pr\u00e9cision d\u2019un ma\u00eetre verrier. Chaque cuisson est pens\u00e9e comme un travail de mati\u00e8re, \u00e0 la mani\u00e8re des fresquistes byzantins qui appliquaient les pigments sur le pl\u00e2tre encore humide.<\/p>\n<p data-start=\"1937\" data-end=\"2537\">Le repas s\u2019ach\u00e8ve sur une note dor\u00e9e, presque liturgique : un limoncello accompagn\u00e9 de trois desserts embl\u00e9matiques : tiramisu, panna cotta, tortino al cioccolato.
