Dans l\u2019\u00e9clat d’une dorade et sa mosa\u00efque de l\u00e9gumes suivie d\u2019un tiramisu au limoncello, une m\u00e9moire remonte \u00e0 la surface : celle des Pouilles, entre Orient et Occident, entre gestes culinaires et h\u00e9ritage byzantin. Chez Nonno Nino, le restaurant italien situ\u00e9 au 10 rue Br\u00e9montier (Paris 17e), Kevin Negro ne se contente pas de cuisiner l\u2019Italie : il exalte les saveurs d’un patrimoine artistique.<\/strong><\/p>\n

\"\"N\u00e9 dans le sud de l\u2019Italie, Kevin Negro a grandi au contact d\u2019une cuisine g\u00e9n\u00e9reuse, fa\u00e7onn\u00e9e par la lumi\u00e8re m\u00e9diterran\u00e9enne et par la pluralit\u00e9 culturelle des Pouilles. Apr\u00e8s un d\u00e9tour par le design d\u2019int\u00e9rieur, il choisit la cuisine comme langage. L\u2019assiette devient sa toile, le restaurant Bonno Nino son atelier.<\/p>\n

Dans les Pouilles, l\u2019art byzantin est partout : dans les absides peintes, les fresques rupestres, les d\u00f4mes orn\u00e9s de mosa\u00efques. L\u2019oratoire de Casaranello (Ve si\u00e8cle) offre un ciel \u00e9toil\u00e9 comme une promesse d\u2019\u00e9ternit\u00e9. Entre le VIIIe et le XIe si\u00e8cle, la domination byzantine impr\u00e8gne l\u2019architecture, les ic\u00f4nes, et les rites.<\/p>\n

\u00c0 Paris, cette esth\u00e9tique se transpose dans les plats de Kevin Negro. La dorade et sa mosa\u00efque de l\u00e9gumes reprend le principe du fragment color\u00e9 assembl\u00e9 en un tout harmonieux. Verts tendres, rouges profonds, et jaunes lumineux rappellent les compositions byzantines, o\u00f9 le regard se perd dans la brillance des tesselles dor\u00e9es.<\/p>\n

\"\"Chez Nonno Nino, la carte 2025 d\u00e9ploie un r\u00e9pertoire qui pourrait s\u2019apparenter \u00e0 un cycle pictural. Les viandes y tiennent le r\u00f4le des figures h\u00e9ro\u00efques : Scaloppina al tartufo, noble escalope de veau aux champignons et truffe noire, ou Cotoletta alla milanese, pan\u00e9e avec la pr\u00e9cision d\u2019un ma\u00eetre verrier. Chaque cuisson est pens\u00e9e comme un travail de mati\u00e8re, \u00e0 la mani\u00e8re des fresquistes byzantins qui appliquaient les pigments sur le pl\u00e2tre encore humide.<\/p>\n

Le repas s\u2019ach\u00e8ve sur une note dor\u00e9e, presque liturgique : un limoncello accompagn\u00e9 de trois desserts embl\u00e9matiques : tiramisu, panna cotta, tortino al cioccolato. Le jaune solaire du limoncello rappelle les fonds d\u2019or des ic\u00f4nes, tandis que le tiramisu, dont le nom signifie \u00ab emm\u00e8ne-moi au ciel \u00bb, semble dialoguer avec les anges peints des fresques apuliennes.<\/p>\n
