Les inventions culinaires ont souvent servi de tremplin aux grandes avanc\u00e9es industrielles. L\u2019histoire de ces trouvailles, pr\u00e9cieusement conserv\u00e9es \u00e0 l\u2019Institut national de la propri\u00e9t\u00e9 industrielle (INPI), r\u00e9v\u00e8le une France inventive, o\u00f9 la table et l\u2019atelier dialoguent depuis plus de deux si\u00e8cles.<\/strong><\/p>\n

\"\"<\/a>C\u2019est tout l\u2019enjeu du merveilleux livre Le G\u00e9nie gourmand<\/em>, publi\u00e9 en 2024 par l\u2019INPI aux \u00e9ditions Gr\u00fcnd : un voyage dans les archives des brevets li\u00e9s \u00e0 l\u2019alimentation, de 1791 \u00e0 nos jours. Ces dossiers, pr\u00e8s de trois millions au total, renferment une myriade de croquis, plans et aquarelles d\u2019inventeurs passionn\u00e9s, de v\u00e9ritables \u0153uvres d\u2019art techniques et po\u00e9tiques.<\/p>\n

Saviez-vous que la cocotte-minute doit son existence aux recherches sur la machine \u00e0 vapeur ? Que les premiers proc\u00e9d\u00e9s de r\u00e9frig\u00e9ration ont r\u00e9volutionn\u00e9 autant les laboratoires de chimie que les garde-manger ? Ou encore que la bo\u00eete de conserve, n\u00e9e de l\u2019ing\u00e9niosit\u00e9 de Nicolas Appert en 1823, a transform\u00e9 en profondeur l\u2019\u00e9conomie domestique ? On d\u00e9couvre dans le livre Ferdinand Carr\u00e9, qui en 1857 imagine des proc\u00e9d\u00e9s pour \u00ab produire du froid \u00e0 l\u2019aide d\u2019ammoniac \u00bb, ou Casimir-Joseph Ledru de B\u00e9thune, qui r\u00eave en 1825 d\u2019un appareil universel capable de pr\u00e9parer un repas complet sur un m\u00eame fourneau : pot-au-feu, r\u00f4ti, caf\u00e9, punch et cr\u00e8mes compris. L\u2019esprit du progr\u00e8s souffle dans chaque plan, chaque trait, avec l\u2019enthousiasme d\u2019une \u00e9poque fascin\u00e9e par la vapeur et la m\u00e9canisation.<\/p>\n
