Port\u00e9e depuis 2024 par Audrey et Enzo Anasse, cette table vibrante r\u00e9veille les papilles \u00e0 grands coups d&#8217;\u00e9pices d&#8217;ailleurs, de viandes Label Rouge ultra-locales et de mariages sucr\u00e9s-sal\u00e9s audacieux. <\/strong><\/p>\n<div class=\"\">Bouma\u00ef, c&#8217;est avant tout une histoire de famille, de voyages et de passion partag\u00e9e. <span class=\"\">Derri\u00e8re cette adresse pleine de charme sont install\u00e9s Audrey et Enzo Anasse, accompagn\u00e9s de <\/span>leur jeune associ\u00e9e, Zoey, 5 ans. \u00ab Bouma\u00ef \u00bb &#8211; du nom de leur perroquet &#8211; un nom qui r\u00e9sonne comme une \u00e9vidence pour cette famille dont le projet s&#8217;est construit au fil des rencontres. Originaire de la R\u00e9union, Audrey a d\u00e9m\u00e9nag\u00e9 dans le P\u00e9rigord \u00e0 l\u2019\u00e2ge de 10 ans. Enzo, lui, est originaire du sud de la France. Leur rencontre commence \u00e0 Cannes, au Grand H\u00f4tel, o\u00f9 ils travaillent, avant de les conduire sur les routes d\u2019Asie. Ensemble, ils d\u00e9couvrent des paysages, des cultures et surtout une multitude de saveurs qui viendront nourrir leur vision de la cuisine. Ici, le sens de l\u2019hospitalit\u00e9 n\u2019est pas un d\u00e9tail : il fait partie int\u00e9grante de l\u2019exp\u00e9rience. Dans les murs du restaurant, on retrouve un subtil m\u00e9lange d\u2019art, de po\u00e9sie, de passion et de m\u00e9tissage culinaire. Une cuisine ouverte sur le monde mais profond\u00e9ment ancr\u00e9e dans son territoire. Car chez Bouma\u00ef, tout ou presque est local. Les l\u00e9gumes proviennent du jardin, des march\u00e9s ou parfois m\u00eame de cueillettes en for\u00eat lorsque la saison des champignons le permet. Les viandes et volailles sont s\u00e9lectionn\u00e9es aupr\u00e8s de producteurs r\u00e9gionaux.<\/div>\n<div><\/div>\n<div class=\"\">Le canard et le porc sont notamment issus de l\u2019\u00e9levage de <a href=\"https:\/\/www.bienvenue-a-la-ferme.com\/\">Mr et Mme Lassagne<\/a>, en autonomie compl\u00e8te et sous Label Rouge. Quant aux \u00e9pices, essentielles \u00e0 l\u2019identit\u00e9 de la maison, elles sont choisies avec soin aupr\u00e8s de Rachel, de la boutique \u00ab <a href=\"https:\/\/www.destination-perigueux.fr\/commerces-services\/le-bonheur-epice\/\">Au Bonheur \u00c9pic\u00e9<\/a> \u00bb \u00e0 P\u00e9rigueux. La cuisine d\u2019Audrey ne suit pas une partition fig\u00e9e. Elle raconte un souvenir, un voyage ou une rencontre. Cette cuisine m\u00e9tiss\u00e9e surprend autant qu\u2019elle s\u00e9duit, \u00a0c\u2019est vivre une v\u00e9ritable exp\u00e9rience culinaire. Une invitation \u00e0 \u00e9veiller les sens, \u00e0 d\u00e9couvrir des parfums inattendus, \u00e0 appr\u00e9cier la beaut\u00e9 d\u2019une assiette et \u00e0 se laisser surprendre par les saveurs.<\/div>\n<div><\/div>\n<div class=\"\">Parmi les propositions estivales du moment, le thon mi-cuit illustre parfaitement l\u2019esprit de la maison. Accompagn\u00e9 d\u2019une sauce vindaye, relev\u00e9e d\u2019ail, d\u2019oignon, de gingembre et de curcuma, puis adoucie par une sauce citronn\u00e9e au miel du P\u00e9rigord et rafra\u00eechie par une huile de basilic, le plat ouvre l\u2019app\u00e9tit autant qu\u2019il raconte une histoire. Une histoire de terroir, de voyage et de partage.
