Fontenille: A Collection of Exceptional Hotels

Frédéric Biousse and Guillaume Foucher founded the Fontenille Group in 2015. The adventure began with the opening of the Domaine de Fontenille in the Luberon. The group then opened Les Bords de Mer in Marseille. The third opening took place in Menorca with the Santa Ponsa and Torre Vella estates. Today, the collection includes nearly a dozen properties across Europe. Some of these exceptional establishments are classified as Relais & Châteaux. Guillaume Foucher is a former gallery owner with a passion for heritage. He humorously invokes the Roman Empire when discussing the group’s future developments. Frédéric Biousse, meanwhile, is a graduate of Centrale and a former creative director for brands such as Maje and Sandro.

Fabio Serafino: The Essence of Italian Hospitality

Fabio Serafino is at the helm of the Pieve Aldina Hotel. This professional has extensive experience at prestigious five-star French establishments. His career began in Paris at the Terrass” Hôtel, followed by the Pavillon de la Reine. He then served as Front Desk Manager at the Hôtel Le Cinq Codet for nearly four years. Fabio Serafino honed his expertise at the Hôtel Crillon le Brave in Provence. Drawing on this wealth of experience, he joined the Fontenille Collection in January 2023, where he has brought new brilliance to this gem of a hotel, which is also a Relais & Châteaux property.
